Whole Grain Bread

3 Cups Flour (1 cup Oat flour, 1 cup white,1 cup other grain (wheat/rye/etc), plus extra for counter

3 1/4 Cups warm water

1 packet yeast

1 tspn brown sugar

1/2 tspn salt (optional)

2 tbspns corn meal (approx.)

2-5 tbspn oil

1 Egg white beaten


Combine 1 packet Yeast, 1 tspn brown sugar, 1/4 cups warm (between 105-117 degrees fht.)


Mix with a fork and cover bowl with plastic

Place in a warm space for 10-15 minutes

Add  3 cups of water, 3 cups flour, 2-5 tbspn oil 

Mix by hand for about 5 minutes

Kneed into a ball by first folding into thirds and put in a bowl

Cover with plastic and let rise for 20 minutes (100 degree oven)

Punch down and rise for another 20 minutes

Preheat oven to 375 degrees fht.

Roll bread out into loaves

Coat with egg white wash 

Oil and corn meal baking pan(s)

Bake 35-40 minutes depending on doneness and oven

Put on cooling rack to cool


Serve and enjoy!

Pumpernickel Bread Recipe

3 Cups Flour (2 cups rye, 1 cup white), plus extra white for counter

1/4 cup powdered chocolate

3 1/2 Cups warm water

1 packet yeast

1 tspn dark brown sugar

1/2 tspn salt (optional)

2 tbspns corn meal (approx.)

1 tbspn oil

1 Egg white beaten

Caraway seeds (optional)



Combine 1 packet Yeast, 1 tspn dark brown sugar, 1/2 cups warm (between 105-117 degrees fht.)

Mix with a fork and cover bowl with plastic

Place in a warm space for 10-15 minutes

Add  3 cups of water, 3 cups flour, 1/4 cup chocolate, 1 tbspn oil and seeds

Kneed into a ball by first folding into thirds and put in a bowl

Cover with plastic and let rise for 20 minutes (100 degree oven)

Punch down and rise for another 20 minutes

Preheat oven to 375-400 degrees fht.

Make into loaves

Coat with egg white wash

Oil and corn meal baking pan(s)

Bake about 35-45 minutes depending on doneness and oven 


Put on cooling rack to cool


Serve and enjoy!

Baguette loaves

3 Cups Flour, plus extra for counter

3 Cups warm water

1 packet yeast

1 tspn sugar

1/2 tspn salt

2 tbspns corn meal

1 tbspn oil

1 Egg white beaten


Combine 1/2 packet Yeast, 1 tspn sugar, 1/2 cup flour, 1 1/4 cups warm (between 105-117 degrees fht.)

Mix with a fork and cover bowl with plastic.

Place in a warm space for 10 minutes

Mix 1/2 packet yeast, 1 3/4 cup water, 2 1/2 cup flour, 1 tbspn oil 

Mix by hand for about 5 minutes

Kneed into ball by first folding into thirds and put in a bowl

Cover with plastic and let rise for 20 minutes (100 degree oven)

Punch down by first folding into thirds 

Rise for 15 minutes 

Preheat oven to 375-400 degrees fht.

Shape into baguette by rolling dough into 12 x 8 inch rectangles then roll into a baguette.

Make a few diagonal cuts in the top of loaves for expansion

Bake 20 minutes until golden brown.  Actual cooking time may vary depending on oven


Put on cooling rack to cool


Serve and enjoy!

Basic White Bread

Add remainder (2 3/4 cups) of water, 3 cup flour, 3 tbspn oil & caraway seeds

Kneed into a ball by first folding into thirds and put in a bowl

Cover with plastic and let rise for 20 minutes (100 degree oven)

Punch down and rise for another 20 minutes

Preheat oven to 375 degrees fht.

Make into loaves

Coat with egg white wash

Corn Meal and spray a pan with oil

Bake 30-45 minutes depending on doneness and oven 

Put on cooling rack to cool


Serve and enjoy!
